MAC N’ CHEESE

Instructions:

1.  In a large pot, boil macaroni with lightly salted water on high for 9 minutes, careful not to overcook as it will bake in the oven. Reserve about one cup of the pasta water.

2.  Drain well and place pasta into a large bowl. Add the egg yolk and yogurt into the hot pasta and mix. Set aside.

3.  Preheat oven to 400°F.

4.  In another large pot, melt butter until lightly browned and immediately pour in the flour. Stir to form a paste. Gradually pour in the milk and mix until a slightly thickened consistency forms. Add in the pasta water.

5.  Add in both the shredded gouda and sharp cheddar cheeses to the mixture. Add in salt/pepper and paprika powder to taste.

6.  Mix again until a thick sauce forms. Pour the macaroni pasta into the pot, mix well.

7.  Pour mixture into casserole dish and top with sliced mozzarella to desired liking. The content tends to bubble over so I place a baking tray directly under the glass dish to avoid oven cleanup. Cover with aluminum foil.

 

8.  Bake covered for 30-35 minutes on medium rack. Remove aluminum foil and broil for about 3-5 minutes or until the macaroni has browned. Careful not burn.
