ZESTY QUINOA SALAD

Instructions:

1.       Boil quinoa on medium-high for 12 minutes. Drain well and set aside.

2.     In a medium bowl, grate 2 of the 3 limes, add zest to the bowl. Juice all three limes and add to the bowl. Finely dice the bell pepper and celery into small pieces. Add to the bowl. 

3.     In a blender, blend the BelGioioso cheese to create a fine powder consistency. If using Parmesan or something similar in consistency, skip this step.

4.     Pour blended cheese into the medium bowl and mix to combine the ingredients. Add in drained quinoa. Add in salt and pepper as desired. 

5.     Lastly, drizzle in olive oil and mix well 

I wanted this recipe to be light but if you’d like, you can add pasta. This dish is so delicious AND SIMPLE, I KNOW YOU CAN DO IT as a salad topper, in burritos, or with burgers. It’s so refreshing with the lime zest creating extra tanginess and perfect for summer get togethers!!
